Easy weeknight dinners are a must for working parents. We want homemade, budget-friendly meals our kids will actually eat — without spending hours in the kitchen. Because by dinnertime, everyone is tired.

Here I’m sharing 12 easy weeknight dinners your family will actually eat. These are the real-life meals I make for my own kids — simple, practical recipes that don’t take forever and don’t require a special trip to the grocery store. Because let’s be honest, most kids are picky, and sometimes husbands are even pickier.

You’ll find quick fish dinners (my personal favorites because they’re fast and crispy), make-ahead meals for organized weeks, and cozy comfort food like my emergency ground beef stew — the one I make when I forgot to thaw dinner and need something on the table fast. No judgment here. We’ve all been there.

Oh! By the way, I didn’t include my bacon wrapped chicken bites in this list because they take a little more prep than I can usually manage on a busy weeknight, but they’re still one of my kids’ absolute favorites if you’re looking for something a little extra.
