Liver is one of those foods we should probably all eat more of, and yet I find that a surprising number of people have either never tried it or have absolutely no idea what to do with it. I get it—it’s not exactly the most approachable ingredient.
I love the classic liver and onions, but even the things we love deserve a little variety now and then. Here, the liver gets coated in cornmeal and pan-fried until golden and crispy, which gives it a completely different texture from the usual preparation.
Now, a warning: this is still liver, and it’s going to taste like liver. But I don’t necessarily think that’s a bad thing. Then again, I do like liver. If you’re a liver fan and you also happen to love crispy food, I think you’ll like this one.

The cornmeal gives the outside a wonderfully crisp coating while the liver stays tender inside. The thyme, paprika, and garlic add just enough seasoning without covering up the flavor of the liver itself.

You don’t need much to make this recipe:
- Liver
- Milk, for soaking
- Medium-grind cornmeal
- Dried thyme
- Paprika
- Garlic Powder
- Salt
- Olive Oil, for frying
I like medium-grind cornmeal here because it gives you a noticeable crunch plus great flavor.

How to Make Cornmeal-Crusted Liver
Transfer to a plate and serve immediately while the coating is still crisp.
Place the liver in a bowl, cover with milk, and let it soak for 20 to 30 minutes, then drain and pat very dry with paper towels.
In a shallow bowl, combine the cornmeal, thyme, paprika, garlic, and salt.
Coat each piece of liver well in the seasoned cornmeal, shaking off any excess.
Heat a thin layer of oil in a skillet over medium heat and fry the liver until golden and crispy on both sides and cooked to your desired doneness.
How to Reheat Cornmeal-Crusted Liver
This is one of those recipes that is best straight from the pan, when that cornmeal coating is at its crispiest.
If you have leftovers, I recommend reheating them in an air fryer or oven. The dry heat helps bring some of that crispiness back.
For the air fryer, heat until the liver is warmed through and the coating is crisp again.
You can also reheat it in the oven on a baking sheet.
I wouldn’t recommend the microwave if you’re hoping to keep the crispy coating. It will warm the liver, but the moisture from the microwave softens the cornmeal and changes the texture, so you lose much of that crunch.
What to Serve With Cornmeal-Crusted Liver
This liver is good with simple sides that don’t compete with it. Think rice and beans, mashed potatoes, roasted vegetables, a simple salad, or whatever you would normally serve with liver and onions.
And if you’re Brazilian, you already know that a little rice and beans alongside this would not be a bad idea.
A Few Tips
Don’t skip the medium-grind cornmeal. It gives the coating enough texture to become properly crispy.
Don’t overcrowd the pan. Give the pieces some room so they actually fry rather than steam.
Eat it hot. Like most crispy foods, this is at its best right away.
Use the oven or air fryer for leftovers. The microwave is convenient, but it will soften that lovely crunchy coating.
Can You Make This Ahead?
You can prepare the seasoned and coated liver ahead of time, but I prefer cooking it when you’re ready to eat. The cornmeal coating is at its best when freshly fried.
If you do have leftovers, reheat them in the air fryer or oven rather than the microwave to preserve as much of the crisp texture as possible.

Crispy Cornmeal-Crusted Liver
Ingredients
- 1 lb beef liver
- 1/2 cup milk for soaking
- 2/3 cup medium-grind cornmeal plus more as needed
- 1 teaspoon salt or to taste
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- olive oil for frying
Instructions

Notes
- Trimming the liver: I like to remove the silver skin and any tough connective tissue before cooking. These parts can be unpleasantly tough and chewy.
- Why soak the liver in milk? The milk helps mellow the strong smell of the liver. After soaking, drain it well and pat it dry before seasoning.
- Cornmeal: Medium-grind cornmeal gives the liver a nice crunchy coating. You may need more or less cornmeal depending on the size and number of liver pieces you have
- Reheating: For the crispiest leftovers, reheat the liver in an air fryer or oven. The microwave will warm it up, but the cornmeal coating will become softer and lose some of its crunch.
