- In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sautĂŠ until softened.
- Stir in the rice and season with salt. SautĂŠ for 2-3 minutes, coating the rice in the oil.
- Pour in the champagne and bring to a simmer. Cook uncovered until the liquid has almost evaporated, then reduce the heat to low, cover, and cook until the rice is tender. Turn off the heat.
