Christmas Rice

Ingredients

  • 3 tablespoons olive oil
  • 1 onion finely chopped or grated
  • 2 cups white rice washed and drained
  • Salt to taste
  • 3 cups champagne or sparkling wine
  • 1 cup dried cranberries or white or black raisins
  • 1 cup dried apricots chopped
  • ¼ cup parsley chopped
  • 1 cup slivered almonds

Instructions

  • Heat a dry skillet over medium-low heat. Add the slivered almonds and stir frequently until they are golden and fragrant, about 2-3 minutes. Remove from the skillet and set aside to cool.
  • In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened.
  • Stir in the rice and season with salt. Sauté for 2-3 minutes, coating the rice in the oil.
  • Pour in the champagne and bring to a simmer. Cook uncovered until the liquid has almost evaporated, then reduce the heat to low, cover, and cook until the rice is tender. Turn off the heat.
  • Gently fold in the raisins, dried apricots, chili peppers, parsley, and toasted almonds. Mix until well combined.
  • Transfer to a serving dish and enjoy!
