Ingredients and Substitutions
- 700g (1.5 lbs) Beef Stew Meat â Use a good-quality cut for tender, flavorful bites.
- 1 Yellow Onion, 4 Garlic Cloves â For flavor.
- 3 Dried Bay Leaves â A must for that extra flavor.
- 2 Tablespoons Italian Seasoning â Adds a fresh herb flavor. Chimichurri is a great alternative, with a different but delicious flavor.
- 1 Tablespoon Smoked Paprika â For that smoky depth.
- Salt, to taste â Always adjust this to your personal preference.
- 2 Tomatoes â If youâre out, two handfuls (about 1 cup) of cherry tomatoes work well too. You can also add some tomato sauce instead.
- 1 Large Carrot â Adds subtle sweetness and color. If you only have small carrots, use two instead.
- 2 Large Potatoes â Adds heartiness to the soup.
- 6 Cups (1.5 liters) Water â You can also use a veggie or beef broth if you prefer. Just make sure itâs a good-quality broth that you love. Chicken broth would also work fine if thatâs what you have on hand.
- Angel Hair pasta or any short pasta (200g or 7 oz) â Choose a pasta that works well in soup. Angel hair (also called cappelli d’angelo), ditalini, acini di pepe, or pastina are great choices.
- Parsley, to taste â Adds a fresh finish; sprinkle it in just before serving.
How to Make Beef and Noodle Soup in the Instant Pot
- Season the Beef: Drizzle a bit of olive oil into the Instant Pot and season the beef stew meat with salt.
- Sauté the Beef: Turn on the sauté function, and brown the beef in batches if needed. Let it cook until all sides are nicely seared.
- Add Seasonings: Once the beef is browned, add the dried basil, smoked paprika, chimichurri (or Italian seasoning), garlic, and onion. Stir everything together for a minute until the flavors begin to meld.
- Add Broth & Veggies: Pour in the water (or broth), then add the tomatoes, potatoes, and carrots. Give it a good stir.
- Pressure Cook: Close the lid and set the Instant Pot to Pressure Cook for 30 minutes on high pressure. Once the timer goes off, do a quick release.
- Option 1: After opening the lid, fish out the basil leaves and discard them. Remove the beef chunks and set them aside on a plate. Use an immersion blender to blend everything left in the pot until smooth. Once blended, add the beef back into the pot.
- Option 2: After opening the lid, remove the veggies (tomatoes, potatoes, and carrots) and place them in a blender with about 2 cups of the soup liquid. Blend until smooth, then return the blended contents to the soup.
- Add the Pasta: Turn the sautĂ© function back on. Stir the soup, then add your pasta. (Check your pasta package for cooking timesâmine cooks al dente in about 4 minutes). Keep stirring to prevent the pasta from sticking to the bottom. If it gets too thick, feel free to add a little more water.
- Final Touches: Once the pasta is cooked, turn off the sauté function. Add the parsley, give it a taste, and adjust the salt as needed.
- Serve: Ladle your cozy beef and noodle soup into bowls, and enjoy!

FAQ
1) Can i use ground beef instead?
I have never tried.
2. Is there a slow cooker method?
I think it would work, but unfortunately I currently do not own a slow cooker so I haven’t tested it yet.
3) Is this recipe kid-friendly for the whole family? Yes! This beef soup recipe is perfect for the whole family. The tender beef and soft noodles make it easy for little ones to eat, and the comforting flavors will be a hit with everyone. It’s a great way to sneak in some extra veggies, too!
4) Can I freeze this soup?
I have never tried it. But, I definitely do not recommend freezing it. Usually soups with pasta do not freeze well. And personally, I would never eat sometimes with a funky texture, so I wouldn’t even bother freezing this.
