High-Protein Chocolate Berry Muffins

Jump to Recipe Print Recipe

Here’s an easy, one-bowl muffin recipe that will become your new favorite for busy mornings! These Berry and chocolate High-Protein Muffins are fluffy, can be made gluten-free, and are totally free from added sugar. They taste like a treat but are packed with protein and wholesome ingredients to keep you going all day. My husband is always on a mission to eat more protein, so I started making these High-Protein Berry and Chocolate muffins for him. Today, I am sharing the recipe with you!

High-Protein Chocolate Chips Berry Muffins gluten free and no added sugar

Ingredients and Substitutions:

  • Eggs
  • Yogurt: I used plain yogurt, but you can also use Greek yogurt
  • Coconut Oil: Swap with any neutral oil, like avocado or vegetable oil.
  • Flour: I use all-purpose flour, but, this would also work with a gluten-free flour mix
  • Protein Powder: Any flavor that pairs well with chocolate and berries will work, here I am using vanilla.
  • Chocolate Chips and Berries: Adjust to your taste—use both, or increase one if you skip the other! To make this truly sugar free, use sugar free chocolate.

High-Protein Chocolate Berry Muffins in muffin pan ready to be baked

Instructions:

  1. Mix It All Together: Preheat your oven to 200°F (175°C) and line a muffin tin with 8 paper liners. Grab your mixing bowl and add the eggs, yogurt, and coconut oil. Stir until smooth.
  2. Add Dry Ingredients: Add the gluten-free flour mix, protein powder, and baking powder to the bowl. Fold until the batter is smooth, but don’t overdo it—just a few turns to get everything combined.
  3. Mix-Ins: Toss in those chocolate chips and juicy chopped strawberries. Give a gentle stir so they’re evenly distributed.
  4. Bake: Pour the batter into the muffin liners, filling each about 3/4 full. Bake for 18-22 minutes, until a toothpick comes out clean.
  5. Enjoy!

How to Store Your High-Protein Muffins

Once your muffins have cooled completely, here’s how to keep them fresh:

  • At Room Temperature: Store in an airtight container for up to 2 days. They’ll stay soft and delicious.
  • Freezing for Later: These muffins freeze beautifully! Wrap each muffin individually in plastic wrap or place them all in a single layer in a freezer-safe bag. They’ll keep fresh for up to 3 months. To enjoy, just thaw at room temperature or heat in the microwave for about 20-30 seconds for that fresh-out-of-the-oven warmth.

These muffins are here to make busy mornings easier, so you’ll always have a quick, protein-packed option at hand!

Brazilian Pudim 🤎 It’s funny how our taste buds c Brazilian Pudim 🤎

It’s funny how our taste buds change as we get older. This was my grandmother’s favorite dessert, and I never really understood the obsession.

And now? I’m slowly becoming obsessed with it, too.

Brazilian pudim is a silky, caramel-covered custard that looks far more impressive than the effort it requires. You make a quick caramel, pour in the custard, and let it bake gently in a water bath until it has that perfect, barely-there wobble.

The best part? It’s an excellent make-ahead dessert for a special occasion. Make it the day before, let it chill overnight, and all that’s left to do is loosen the caramel, flip it onto a plate, and admire your work.

And, ideally, try to get a slice before everyone else does. 🤎#tastyrecollections #easyrecipes #pudim #pudimdeleitecondensado #brazilianfood
🎶 Working 9 to 5… 🎶 And then coming home and real 🎶 Working 9 to 5… 🎶

And then coming home and realizing you still have to figure out what everyone is eating for dinner.

This is one of those recipes I make when I want something hearty and comforting, but absolutely do not want a complicated project.

Ground beef, potatoes, butternut squash, and a few pantry staples all go into one pot and simmer away until everything is tender.

I like using frozen butternut squash for this because wrestling with a whole squash on a Tuesday night is simply not happening.

It’s cozy, budget-friendly, and makes enough for leftovers — which means tomorrow’s dinner is already halfway figured out.

Honestly, that’s the kind of recipe I want after a 9-to-5.

I’ve been making a lot of banana things lately. T I’ve been making a lot of banana things lately.

This is partly because I like banana cake, and partly because my children have a very unpredictable relationship with bananas. Sometimes they eat them all. Sometimes they look at them as if I’ve brought home a completely unfamiliar fruit.

For this one, I make a caramel first, then add the bananas and cinnamon and let them cook for another minute. The mixture goes into the batter, and the cake gets a simple cinnamon glaze.

It’s a good cake for an afternoon coffee, or for when you have a few bananas that need a little help.

And if you have children, you may want to make two.

If you need a little help getting zucchini onto th If you need a little help getting zucchini onto the table, make these crispy zucchini fritters. 🥒

They’re cheesy, golden, crispy around the edges, and soft in the middle—and they’re one of my favorite ways to make a vegetable disappear from my kids’ plates.

The trick is getting the zucchini mixture to the right consistency. Moist, but not wet. If yours looks a little looser, just add a bit more flour. And don’t skip flattening them in the pan—it gives you even more crispy edges.

Serve them for breakfast, lunch, dinner, or as an easy vegetable side dish. They’re also a pretty good option for the zucchini skeptics in your life. 😉

Are you a zucchini person, or do I need to convince you? 👇

I don’t even like bananas… and I ate this chocolat I don’t even like bananas… and I ate this chocolate banana bread for breakfast, dessert, and basically everything in between. 😂

It’s intensely chocolatey, packed with crunchy walnuts, and topped with a silky white chocolate coffee glaze. And somehow, the banana flavor stays subtle enough that even a banana skeptic like me absolutely loved it.

It’s also a great way to use up those very ripe bananas that somehow appear on your counter every few weeks. One bowl, pantry staples, no special equipment.

And yes, I ate an embarrassing amount of this one myself. 😅

I asked my mother-in-law to show me how she makes moqueca — a Brazilian fish stew made with coconut milk, dendê oil, fresh vegetables, fish, and shrimp.

It’s simple, comes together in minutes, and somehow tastes like you spent all day in the kitchen.

Serve it with rice, gather everyone around the table, and you have the kind of meal that turns into a memory.

Every time I find frozen passion fruit at the Brazilian grocery store, I buy a few packs because I already know one of the things I’m making: this Passion Fruit Bundt Cake.

It’s soft, incredibly fluffy, and finished with a fresh passion fruit glaze that brings me right back home.

If you’ve never baked with passion fruit before, this is the recipe to start with.

Would you try it? 🥰
