Here’s an easy, one-bowl muffin recipe that will become your new favorite for busy mornings! These Berry and chocolate High-Protein Muffins are fluffy, can be made gluten-free, and are totally free from added sugar. They taste like a treat but are packed with protein and wholesome ingredients to keep you going all day. My husband is always on a mission to eat more protein, so I started making these High-Protein Berry and Chocolate muffins for him. Today, I am sharing the recipe with you!
Ingredients and Substitutions:
- Eggs
- Yogurt: I used plain yogurt, but you can also use Greek yogurt
- Coconut Oil: Swap with any neutral oil, like avocado or vegetable oil.
- Flour: I use all-purpose flour, but, this would also work with a gluten-free flour mix
- Protein Powder: Any flavor that pairs well with chocolate and berries will work, here I am using vanilla.
- Chocolate Chips and Berries: Adjust to your taste—use both, or increase one if you skip the other! To make this truly sugar free, use sugar free chocolate.
Instructions:
- Mix It All Together: Preheat your oven to 200°F (175°C) and line a muffin tin with 8 paper liners. Grab your mixing bowl and add the eggs, yogurt, and coconut oil. Stir until smooth.
- Add Dry Ingredients: Add the gluten-free flour mix, protein powder, and baking powder to the bowl. Fold until the batter is smooth, but don’t overdo it—just a few turns to get everything combined.
- Mix-Ins: Toss in those chocolate chips and juicy chopped strawberries. Give a gentle stir so they’re evenly distributed.
- Bake: Pour the batter into the muffin liners, filling each about 3/4 full. Bake for 18-22 minutes, until a toothpick comes out clean.
- Enjoy!

How to Store Your High-Protein Muffins
Once your muffins have cooled completely, here’s how to keep them fresh:
- At Room Temperature: Store in an airtight container for up to 2 days. They’ll stay soft and delicious.
- Freezing for Later: These muffins freeze beautifully! Wrap each muffin individually in plastic wrap or place them all in a single layer in a freezer-safe bag. They’ll keep fresh for up to 3 months. To enjoy, just thaw at room temperature or heat in the microwave for about 20-30 seconds for that fresh-out-of-the-oven warmth.
