Hey there everyone! Today, I’ve got another lifesaver recipe for all you busy bees out there. Following the success of my effortless butternut squash soup, I’m thrilled to introduce you to the equally hassle-free Effortless Sweet Potato  Carrot Soup. It’s one of my favorite recipes for the winter months. Trust me, it’s practically magic – almost makes itself!

Why Should You Make this Recipe?

In the whirlwind of our daily lives, a hearty and nutritious meal doesn’t have to be a distant dream. This Sweet Potato and Carrot Soup recipe is a game-changer for busy moms or anyone else.

  • Simple ingredients: you probably already have most of them on hand. 
  •  Packed with essential vitamins and the wholesome goodness of sweet potatoes and carrots, it not only fuels your body but also brings warmth and comfort to your soul. 
  • Plus, with minimal effort, you get a delicious homemade soup that’s perfect for any day of the week.
  •  Say goodbye to long hours in the kitchen without compromising on taste!

  • It is also easy peazy and a great way to make baby food!

Ingredients

  • 400g of peeled sweet potatoes (this equaled one large sweet potato over here)
  • 150g of peeled carrots (one medium size carrot)
  • 1 medium onion
  • 2 cloves of garlic
  • Chicken or vegetable broth (as much as you like, I used less than one carton)
  • Olive oil
  • Nutmeg ( i recommend grounding the nutmeg yourself for best flavor)
  • Salt

Directions:

  1. Begin by cutting the sweet potatoes into chunks and slicing the carrots. Quarter the onions and chop the end off the garlic, leaving the peel on. Season with a pinch of salt, drizzle some olive oil, and pop them in the oven until the veggies are tender. You can cover them with aluminum foil if you want.

2. Once all of your veggies are soft, transfer them to a blender. And remember to squeeze the garlic out of its peel when adding it to the mix.

3. To your blender, add a splash of broth, and start blending away. Keep adding broth until you achieve that silky smooth consistency you desire. 

4. Grate a little bit of nutmeg into the mix for that extra dash of flavor. You can add as much as you like according to your personal preference. 

5. And there you have it – a bowl of creamy, dreamy, yummy soup that’s a time-saving masterpiece!

 Simply store it in an airtight container in the refrigerator for up to four days. If you’re feeling extra ambitious, freeze portions for those days when time is truly of the essence. Just thaw, reheat, and enjoy – it’s like a homemade hug in a bowl whenever you need it.

 All you’ll require is a reliable blender to achieve that velvety smooth texture and a baking sheet for roasting the veggies. Keeping it fuss-free ensures you spend more time savoring the results and less time on cleanup.

Troubleshooting

If your soup turns out too thick, simply add a bit more broth until you reach your desired consistency. On the other hand, if it’s too thin, you can pour it into a pot and simmer until it thickens up. 

One more thing: This soup is incredibly easy to make. The trickiest part is cutting the carrots to the right size/thickness. Carrots take longer to cook than sweet potatoes, so to ensure everything is done at the same time, you must cut them into thinner slices or give them a head start in the oven. If you prefer not to do either, just add them to a separate baking tray. This way, you can take them out of the oven without risking burning the other veggies.
