It’s one of my favorite recipes for the winter months. Trust me, it’s practically magic – almost makes itself!

- 400g of peeled sweet potatoes (this equaled one large sweet potato over here)
- 150g of peeled carrots (one medium size carrot)
- 1 medium onion
- 2 cloves of garlic
- Chicken or vegetable broth (as much as you like, I used less than one carton)
- Olive oil
- Nutmeg ( i recommend grounding the nutmeg yourself for best flavor)
- Salt

- Begin by cutting the sweet potatoes into chunks and slicing the carrots. Quarter the onions and chop the end off the garlic, leaving the peel on. Season with a pinch of salt, drizzle some olive oil, and pop them in the oven until the veggies are tender. You can cover them with aluminum foil if you want.
2. Once all of your veggies are soft, transfer them to a blender. And remember to squeeze the garlic out of its peel when adding it to the mix.
3. To your blender, add a splash of broth, and start blending away. Keep adding broth until you achieve that silky smooth consistency you desire.
4. Grate a little bit of nutmeg into the mix for that extra dash of flavor. You can add as much as you like according to your personal preference.
