Instant Pot Hidden Veggie Soup Recipe

Hey everyone! I know that winter is almost over (hoooray!). And yet I have no plans to stop making soup recipes– they’re just too good to let go. Especially when it comes to sneaking in those veggies for my picky eaters! Today, I’m sharing one of my all-time favorites – an Instant Pot Hidden Veggie Soup Recipe. What’s not to love? It turns out gorgeous with the most stunning colour. It’s quick, simple, and usually, I’ve got everything I need right in my kitchen.

Equipment:

  • Knife
  • Cutting board
  • Instant Pot
  • Immersion Blender or a traditional blender

Ingredients:

  • 1 onion
  • 3 garlic cloves, minced
  • 1 stalk of celery, chopped
  • 1 carrot sliced, chopped
  • 1 large potato, chopped
  • 1 carton or about a liter of chicken broth
  • 1/2 bell pepper  (I like to use yellow, orange or red bell peppers)
  • 1/4 cup of the shortcut pasta of your choice
  • 1/2 tsp turmeric
  • Salt to taste
  • olive oil

Just a quick FYI:

  1. Here I used an onion and bell pepper I had in my freezer. You can use fresh or frozen, it does not really matter.
  2. The day I took this picture I was doubling the recipe. So you can see I have 2 potatoes, 2 cartons of broth etc. So just keep that in mind.

Directions:

  1. Using the saute function, saute the onion for two minutes, followed by the chopped celery and carrots for an additional minute. Toss in the garlic, bell peppers, turmeric and a pinch of salt. Cover it all with a liter of chicken broth.
  2. Secure the lid and pressure cook on high for 5 minutes. Once done, release the pressure.
  3. Open the lid, use an immersion blender to blend your soup. Then, hit that saute function again. When it starts to bubble, add your shortcut pasta. Cook it as long as the package directs, stirring occasionally to avoid pasta sticking to the bottom of your pan.
  4. Once your pasta is cooked, give it a taste. Need more salt? Adjust accordingly. And there you have it – Easy Peasy Vegetable Soup!

How to Serve and/or Pairings:

Now that your Instant Pot Hidden Vegetable Soup is bubbling away, it’s time to consider how to serve it up. I love to pair it with a chunk of warm, crusty bread or some cheesy garlic toast for a complete and satisfying meal. 

Storage Instructions:

Got leftovers? Lucky you! Allow it to cool to room temperature, transfer it to an airtight container and pop it in the fridge. It’ll stay fresh for up to three days. For longer storage, freeze the soup without the pasta and make sure to leave some room at the top of the container to account for expansion. Whenever you are ready, thaw it, add it to a pot, wait for it to bubble, and add some pasta to it. Then cook it according to the package directions making sure to stir every once in awhile to prevent sticking. 

Common Substitutions:

Don’t fret if you’re missing an ingredient or two. This soup is forgiving and welcomes substitutions. Swap out the chicken broth for vegetable broth to make it vegetarian, or mix up the veggies based on what’s in your fridge.  No problem – regular pasta works just fine. Get creative and make it your own!

Variations:

While the classic version of this soup is a winner, feel free to experiment with different variations. Here are some ideas of different variations I have tried and I enjoy: 

Add:

  • a zuchinni
  • a tomato, 
  • a handful of spinach for some extra greens sprinkle, 
  • a little bit of Worcestershire sauce
  • or some grated Parmesan on top for a cheesy twist.

Troubleshooting:

Encountering any hiccups in soup perfection? If it’s too thick, add a bit more broth. Too thin? Simmer it a bit longer with the lid off. Adjust the seasoning to your liking, and remember – cooking is an art, not an exact science. Embrace the tweaks to make it suit your taste buds perfectly.
