Equipment

Ingredients

  • 1 onion
  • 3 garlic cloves minced
  • 1 stalk of celery chopped
  • 1 carrot sliced
  • 1 large potato chopped
  • 1 carton or about a liter of chicken broth
  • 1/2 bell pepper I like to use yellow, orange or red bell peppers
  • 1/2 tsp turmeric
  • 1/4 cup of the shortcut pasta of your choice
  • Salt to taste
  • olive oil

Instructions

  • Using the saute function, saute the onion for two minutes, followed by the chopped celery and carrots for an additional minute. Toss in the garlic, bell peppers, turmeric and a pinch of salt. Cover it all with a liter of chicken broth.
  • Secure the lid and pressure cook on high for 5 minutes. Once done, release the pressure.
  • Open the lid, use an immersion blender to blend your soup. Then, hit that saute function again. When it starts to bubble, add your shortcut pasta. Cook it as long as the package directs, stirring occasionally to avoid pasta sticking to the bottom of your pan.
  • Once your pasta is cooked, give it a taste. Need more salt? Adjust accordingly. And there you have it – Easy Peasy Vegetable Soup!
