Hi folks! I’m back with another cozy treat. This time I’m sharing my Grandma’s Lazy Apple Crumble (also known as Lazy Apple Pie) my grandma used to make. It’s super easy, anyone can pull it off (seriously, you’ll see what I mean in the video 😉). Prep is quick, the ingredients are simple and probably already in your pantry, and no fancy tools are needed. The result? Tender, juicy apples under a golden, super crunchy topping — ready to eat straight from the oven. Don’t forget a scoop of vanilla ice cream to take it to the next level!

Equipment

  • Here I’m using a Pyrex 9-inch pie dish, but it’s a tight fit. I recommend something a little larger.
  • Glass or metal both work fine.
  • Just keep in mind: this isn’t the kind of pie you can unmold. Plan to serve it straight from the baking dish. At most, you can use a pan with a removable bottom and take the sides off, but honestly—I wouldn’t bother.

Ingredients Overview

  • Apples – peeled and sliced (Granny Smith is my favorite for the tartness, but any pie-friendly apple like Gala, Honeycrisp, or Golden Delicious will work).
  • Lemon zest + juice – so your apples don’t brown and also for flavour
  • Cinnamon – classic warm spice.
  • Flour, sugar, baking powder, salt – the “lazy crumble” topping.
  • Eggs and Butter – richness + helps the crust form..
  • Sugar for sprinkling – extra crunch on top.

Method Overview:

  • Toss sliced apples with lemon juice, zest, and cinnamon.
  • Spread apples evenly in a buttered baking dish.
  • Mix flour, sugar, salt, and baking powder. Sprinkle over apples.
  • Pour lightly beaten eggs and melted butter on top.
  • Sprinkle with sugar and bake until golden and crunchy.

Storage

  • Keep leftovers covered in the fridge for up to 4 days.
  • Reheat in the oven for best crunch (the microwave softens it).

Variations

  • Add a handful of raisins with the apples.
  • Use fewer crumbs on top (same amount of apples) for a lighter dessert.

Troubleshooting

  • If your lazy apple crumble comes out of the oven with a few dry spots on top—don’t worry, it’s totally normal. You can see in my photo that mine had some, and it still tasted amazing. But if it bothers you, just melt a little butter, brush it over the dry bits, and pop the dish back into the oven for a minute to blend everything together.

  • 10 inch round baking dish (glass or metal)

Ingredients

  • 4 large apples peeled and thinly sliced (I like to use Granny Smith Apples)
  • 1 lemon (zest + juice)
  • 1 teaspoon Ground cinnamon or to taste
  • 240 g all-purpose flour 8.5 oz
  • 280 g granulated sugar 9.9 oz
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 125 g melted butter 4.4 oz
  • 3 eggs lightly beaten
  • 1 tablespoon sugar for sprinkling

Instructions

  • Preheat oven to 180 °C (350 °F).
  • Peel and thinly slice the apples, then toss them with cinnamon, lemon zest, and lemon juice.
    4 large apples, 1 lemon (zest + juice), 1 teaspoon Ground cinnamon
  • In a separate bowl, mix the flour, sugar, baking powder, and salt until well combined.
    240 g all-purpose flour, 280 g granulated sugar, 1 tablespoon baking powder, 1 pinch salt
  • Arrange the apples in the dish, then sprinkle the dry mixture evenly over the top.
  • Pour the lightly beaten eggs over the dry mixture, then drizzle the melted butter on top.
    3 eggs, 125 g melted butter
  • Sprinkle with sugar.
    1 tablespoon sugar
  • Bake for 40 minutes, or until the topping is golden and crunchy
  • Serve warm, with a scoop of vanilla ice cream.

Notes

Notes:
  • Dry spots: If the topping comes out with a few dry bits, brush lightly with melted butter and bake 1 extra minute if desired.
  • Apple choice: Tart apples like Granny Smith work best to balance sweetness, but Gala or Honeycrisp are fine if you prefer a sweeter dessert.
  • Serving & storage: Best served warm with vanilla ice cream. Keeps up to 4 days in the fridge.

Made with whipping cream, egg yolks, and chocolate, it doesn’t taste like traditional ice cream at all. It’s rich, dense, silky, and somewhere between a chocolate truffle and a frozen mousse.

I added a splash of vanilla but you don’t have to.
