Homemade Chicken Spice Rub

Chicken breast is undoubtedly a staple in many households, including ours. However, it’s easy to fall into a rut with the same old recipes. That’s why I’m excited to share a new favorite: a flavorful homemade chicken spice rub recipe that adds bold flavor to your chicken dishes. It’s perfect for grilling chicken in your BBQ and uses only pantry staples! This makes it an easy and delicious option, especially during summer. Ingredients:

  • 4 chicken breasts (approximately 1kg/2lbs)
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon of salt (use more or less according to you personal preference)
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon of brown sugar
  • 2 tablespoons olive oil

Instructions:

  1. Prepare the Spice Rub: In a large bowl, combine all ingredients except chicken. Mix well until the spices are evenly distributed.
  2. Coat the Chicken: Add the chicken breasts to the bowl with the spice mixture. Rub the seasoning mixture over both sides of the chicken breasts, ensuring they are well coated.
  3. Cooking Option
    • 1: Stovetop Method:
      • Heat a large stainless steel skillet over medium-high heat.
      • Place the seasoned chicken breasts in the skillet.
      • Cook for 4-7 minutes on each side, depending on the thickness of the chicken, until the outside is golden brown and the inside is no longer pink.(Chicken’s internal temperature is 165°F (74°C)
    • Cooking Option 2: Grill Method:
      • Preheat your grill to medium-high heat.
      • Place the seasoned chicken breasts on the grill grates.
      • Grill for 4-7 minutes on each side, adjusting the cooking time based on the thickness of the chicken, until the outside is nicely charred and the inside is fully cooked. (Chicken’s internal temperature is 165°F (74°C)
  4. Rest & Serve:
    • Once cooked, remove the chicken from the heat source.
    • Let the chicken rest for about 5 minutes to allow the juices to redistribute.
    • Slice the chicken and serve hot alongside your favorite sides.

Additional Tips (That I Totally Follow, Ahem):

Bring Chicken to Room Temperature: Before cooking, allow your chicken to rest at room temperature for at least 15 minutes. This helps take the chill off and promotes more even cooking.

Pound Chicken: For consistent cooking, consider pounding the chicken to an even thickness. This ensures that all parts of the chicken cook uniformly, preventing dry spots.

Grill: Prior to grilling, ensure your grill is preheated to medium-high heat, reaching approximately 375-400°F. This optimal temperature helps achieve that perfect char and seals in the juiciness of the chicken.

You know life isn’t perfect, and we are often in a hurry. If you need to skip these steps because you are in a hurry, know I do it often. Its better to get something done even if it is not perfect, than to never do it at all. 🙂

How to Serve and Pairings:

Pair your flavorful homemade chicken spice rub with a variety of sides for a delicious meal. Serve it alongside roasted vegetables, a fresh salad, or steamed rice for a well-rounded dish. Consider pairing it with our colorful rice, best cabbage casserole, and sautéed cabbage recipes.

Storage Instructions:

Store the leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, you can freeze the cooked chicken in a freezer-safe bag or container for up to 2-3 months. When ready to enjoy, simply thaw the chicken in the refrigerator overnight and reheat it in the microwave until warmed through.
