If there is one dessert that instantly takes me back to childhood, it’s Torta Alemã.

My grandfather wasn’t much of a dessert person, but whenever our family visited Taberna Alpina in Teresópolis, Brazil, he always ordered the same thing: a slice of Torta Alemã. Years later, that simple dessert still reminds me of those family lunches and special occasions.

This recipe is inspired by the classic Brazilian dessert, but with a small twist. Traditional Torta Alemã is typically chilled in the refrigerator and served cold. My version is frozen, creating a refreshing dessert that is perfect for warm weather, holidays, and gatherings when you need a make-ahead treat.

Made with layers of Maria cookies, a creamy filling, and a rich chocolate topping, this Frozen Torta Alemã combines everything I love about the original while adding a texture that reminds me of an ice cream cake.

Best of all, there’s no baking required.

What Is Torta Alemã?

Torta Alemã is a classic Brazilian dessert made with layers of cookies, a rich cream filling, and a chocolate topping.

Despite its name, which translates to “German Pie,” Torta Alemã is considered a Brazilian dessert and has become a favorite in bakeries, restaurants, and family kitchens throughout Brazil.

Traditional versions are often made with Maria cookies and a creamy filling that chills until firm. The combination of cream, cookies, and chocolate creates a dessert that is rich without being overly sweet.

Today, Torta Alemã is commonly served at birthdays, holidays, family gatherings, and Sunday lunches.

Is Torta Alemã Actually German?

Not really.

Although the name translates to “German Pie,” Torta Alemã is generally considered a Brazilian creation. The exact origin of the name is unclear, but many believe it was inspired by European desserts that influenced Brazilian cuisine over the years.

Whatever its origins, Torta Alemã has become a beloved Brazilian dessert in its own right.

How This Recipe Differs From Traditional Torta Alemã

This recipe is inspired by traditional Torta Alemã, but it isn’t intended to be a completely authentic version.

Most traditional recipes are chilled in the refrigerator and served cold. This version is frozen, which creates a firmer texture that falls somewhere between a classic Torta Alemã and an ice cream cake.

Freezing also makes it an excellent make-ahead dessert for parties, birthdays, and holiday meals because it can be prepared days in advance.

Whatever pan you choose, make sure it is freezer-safe.

For the Cream Filling

  • whipping cream (35% fat): Use whipping cream with at least 35% milk fat for the best texture. Lower-fat alternatives may not whip properly and can affect the consistency of the filling.
  • sweetened condensed milk
  • milk: The coffee adds a subtle depth of flavor and helps balance the sweetness of the cream filling. If serving children or anyone who prefers a caffeine-free dessert, simply replace the coffee with milk.
  • coffee: You can brew a small amount of coffee, but I usually dissolve 1 teaspoon of instant coffee in warm water. It’s quick, easy, and works perfectly in this recipe. For a caffeine-free version, substitute with milk.
  • Maria cookies: Maria cookies are the traditional choice for Torta Alemã. Their light sweetness and delicate texture soften beautifully as the dessert chills. If Maria cookies are unavailable, try: Graham crackers, digestive biscuits, arrowroot biscuits or tea biscuits

For the Chocolate Topping

  • whole milk

  • white sugar
  • butter or margarine

How to make Torta Alemã

This Frozen Torta Alemã is surprisingly easy to make. Simply whip together the cream filling, then layer it with coffee-soaked Maria cookies in a freezer-safe dish. Top everything with a rich homemade chocolate sauce and freeze until firm. I love making it the day before a gathering so dessert is completely taken care of when guests arrive.

Tips for Success

  • Chill your condensed milk before starting if your kitchen is warm.
  • Dip the cookies quickly to prevent them from becoming soggy.
  • Don’t overcook the chocolate topping.
  • Freeze long enough for clean slices.
  • Let the dessert sit at room temperature for 5 to 10 minutes before serving.

Ingredients

For the Cream

  • 1¼ cup (300ml) cups whipping cream 35% fat or heavy cream
  • 1 can (300 ml) condensed milk see tips
  • ½ cup (120ml) milk
  • 3 tablespoons (50ml) coffee (brewed or made by dissolving ½ teaspoon instant coffee in 3 tablespoons hot water)
  • 200 g of Maria cookies

For the Chocolate Sauce

  • 1 cup (250ml) of milk
  • 3 tablespoons cocoa powder
  • 5 tablespoons sugar
  • 1 tablespoon butter or margarine.

To Decorate

  • extra cookies
  • white chocolate

Instructions

Cream

  • In a large bowl, beat the condensed milk and whipping cream with a hand mixer or stand mixer fitted with the whisk attachment until thick, smooth, and fluffy, about 3–5 minutes. Start on low speed and gradually increase to medium-high as the mixture thickens. Set aside.
    1 can (300 ml) condensed milk, 1¼ cup (300ml) cups whipping cream
  • In a shallow bowl, stir together the milk and coffee until combined.
    ½ cup (120ml) milk, 3 tablespoons (50ml) coffee
  • Spread a thin layer of the cream mixture on the bottom of a 9-inch (23 cm) baking dish or springform pan.
  • Quickly dip the Maria cookies into the coffee mixture and arrange them in a single layer over the cream. Spread another layer of cream on top. Continue alternating layers of soaked cookies and cream until all ingredients are used, finishing with a layer of cream. Place in the freezer for at least 3 hours before preparing the sauce

  • Optional: If using a springform pan, arrange additional Maria cookies around the outside of the cake.

Chocolate Sauce

  • In a small saucepan, combine the milk, cocoa powder, sugar, and butter. Cook over medium heat, stirring constantly, until the mixture thickens to a pourable chocolate sauce consistency, about 8–10 minutes.
    1 cup (250ml) of milk, 3 tablespoons cocoa powder, 5 tablespoons sugar, 1 tablespoon butter or margarine.
  • Remove the cake from the freezer and pour the sauce in the center. Gently tilt the pan to spread it evenly.
  • Optional: For an elegant finish, drizzle melted white chocolate over the top. To make the drizzle, melt white chocolate with a small amount of whipping cream, adding the cream gradually until smooth and pourable. Use a spoon or skewer to gently drag through the lines of white chocolate to create a decorative pattern.

  • Return to the freezer for at least 3 hours, or until fully set.

Notes

Optional Decoration: For a bakery-style finish, drizzle melted white chocolate over the top before serving. Melt the white chocolate with a small amount of whipping cream, adding the cream gradually until the mixture reaches a smooth, drizzleable consistency. Use a spoon or piping bag to create decorative lines across the cake.
Serving & Storage Tip: Like ice cream, this dessert is easiest to slice after sitting at room temperature for a few minutes. Be careful not to leave it out too long, especially in a warm kitchen, as it will begin to soften and melt.
Pan Options: I love making this dessert in a springform pan and decorating the sides with cookies for a beautiful presentation. However, because the dessert softens as it warms, it can become messy if left out too long. For easier serving and less cleanup, consider making it in a glass or ceramic baking dish, which helps contain everything should it begin to melt.

This is one of those recipes I make when I want something hearty and comforting, but absolutely do not want a complicated project.

Ground beef, potatoes, butternut squash, and a few pantry staples all go into one pot and simmer away until everything is tender.

I like using frozen butternut squash for this because wrestling with a whole squash on a Tuesday night is simply not happening.

It’s cozy, budget-friendly, and makes enough for leftovers — which means tomorrow’s dinner is already halfway figured out.

Honestly, that’s the kind of recipe I want after a 9-to-5.

I’ve been making a lot of banana things lately. T I’ve been making a lot of banana things lately.

This is partly because I like banana cake, and partly because my children have a very unpredictable relationship with bananas. Sometimes they eat them all. Sometimes they look at them as if I’ve brought home a completely unfamiliar fruit.

For this one, I make a caramel first, then add the bananas and cinnamon and let them cook for another minute. The mixture goes into the batter, and the cake gets a simple cinnamon glaze.

It’s a good cake for an afternoon coffee, or for when you have a few bananas that need a little help.

And if you have children, you may want to make two.

They’re cheesy, golden, crispy around the edges, and soft in the middle—and they’re one of my favorite ways to make a vegetable disappear from my kids’ plates.

The trick is getting the zucchini mixture to the right consistency. Moist, but not wet. If yours looks a little looser, just add a bit more flour. And don’t skip flattening them in the pan—it gives you even more crispy edges.

Serve them for breakfast, lunch, dinner, or as an easy vegetable side dish. They’re also a pretty good option for the zucchini skeptics in your life. 😉

It’s intensely chocolatey, packed with crunchy walnuts, and topped with a silky white chocolate coffee glaze. And somehow, the banana flavor stays subtle enough that even a banana skeptic like me absolutely loved it.

It’s also a great way to use up those very ripe bananas that somehow appear on your counter every few weeks. One bowl, pantry staples, no special equipment.

And yes, I ate an embarrassing amount of this one myself. 😅
