Oatmeal Chocolate Chip Cookie Bars

Jump to Recipe Jump to Video Print Recipe

Some recipes are more than just food—they’re memories. My mom’s Oatmeal Chocolate Chip Cookie Bars are one of those recipes that has been a staple in my life since childhood. If you’re a family member or friend who’s asked for this recipe over the years, this one is for you!

These bars are wonderfully practical and incredibly tasty. They’re similar to cookies but come with the bonus of no individual shaping required. Everything is baked together on a single sheet pan, making them perfect for when you want a quick and crowd-pleasing treat. My mom has always been conscientious about making healthier choices, so this was her version of a sweet indulgence. You will also be happy to know that all ingredients are pantry staples you’ll likely already have on hand.

Ingredients:

  • Rolled oats (sometimes called old-fashioned oats)
  • Chocolate chips
  • Whole wheat flour
  • Eggs
  • Butter (salted or unsalted, your preference)
  • Brown sugar

FYI

I had to call her to ask and confirm there is no baking powder. And, yes, these are made without baking powder, so I just want to clarify I did not make a typo 😉

Instructions:

  1. Preheat the oven, mix all ingredients in a bowl, and spread onto a sheet pan.
  2. Bake until the edges are golden and set, then cut into bars and let it cool.

Storage:

Store your cookie bars in an airtight container at room temperature. They’ll stay fresh for up to a week (if they last that long!).

How to Serve:

  • Pack them in lunchboxes for school or work.
  • Enjoy them as a quick snack with a glass of milk.
  • Indulge in one as a bedtime treat.

I hope you love these Oatmeal Chocolate Chip Cookie Bars as much as my family does. Don’t forget to follow me on Instagram for more recipes that bring comfort and joy to the table. Enjoy!

Equipment

  • 11×15 baking sheet

Ingredients

  • 2 1/4 cups rolled oats sometimes called old-fashioned oats
  • 2 cups brown sugar
  • 2 cups whole wheat flour
  • 5 large eggs
  • 1 1/2 tablets butter 3/4 cup, softened
  • 3/4 cup dark or semi-sweet chocolate chips optional: substitute raisins for chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Grease a baking sheet with butter and dust with flour.
  • In a bowl, mix together all ingredients except the chocolate chips. You may need to use your hands to ensure everything is well combined.
  • Once the mixture is combined, gently fold in the chocolate chips. Note: the mixture will be sticky, and that’s okay.
  • Transfer the mixture to the prepared baking sheet and spread it out evenly. This requires some patience due to the sticky texture.
  • Bake for approximately 35-40 minutes, or until golden and set.
  • Let cool completely before cutting into bars.

Notes

The number of bars you get depends on how large or small you cut them. The calorie count will vary accordingly and is only an estimate.

3-ingredient chocolate ice cream 🍫 Made with whip 3-ingredient chocolate ice cream 🍫

Made with whipping cream, egg yolks, and chocolate, it doesn’t taste like traditional ice cream at all. It’s rich, dense, silky, and somewhere between a chocolate truffle and a frozen mousse.

I added a splash of vanilla but you don’t have to.

No ice cream maker. No condensed milk. Just three simple ingredients and a little patience while it freezes

What should we call it?

I walk through cooking the filling until it pulls from the pan, rolling it into balls, dipping toothpick tips in butter before inserting them, and cooking the syrup to the hard-crack stage. Then I show how to work quickly—tilting the pan and twirling the candies in the syrup to create that signature crackly shell. I even brought back authentic paper cups from Brazil to serve them in.
