These bars are wonderfully practical and incredibly tasty. Theyâre similar to cookies but come with the bonus of no individual shaping required. Everything is baked together on a single sheet pan, making them perfect for when you want a quick and crowd-pleasing treat. My mom has always been conscientious about making healthier choices, so this was her version of a sweet indulgence. You will also be happy to know that all ingredients are pantry staples youâll likely already have on hand.

Ingredients:
- Rolled oats (sometimes called old-fashioned oats)
- Chocolate chips
- Whole wheat flour
- Eggs
- Butter (salted or unsalted, your preference)
- Brown sugar

I had to call her to ask and confirm there is no baking powder. And, yes, these are made without baking powder, so I just want to clarify I did not make a typo đ

Instructions:
- Preheat the oven, mix all ingredients in a bowl, and spread onto a sheet pan.
- Bake until the edges are golden and set, then cut into bars and let it cool.
Storage:
Store your cookie bars in an airtight container at room temperature. Theyâll stay fresh for up to a week (if they last that long!).

- Pack them in lunchboxes for school or work.

Oatmeal Chocolate Chip Cookie Bars
Equipment
- 11×15 baking sheet
Ingredients
- 2 1/4 cups rolled oats sometimes called old-fashioned oats
- 2 cups brown sugar
- 2 cups whole wheat flour
- 5 large eggs
- 1 1/2 tablets butter 3/4 cup, softened
- 3/4 cup dark or semi-sweet chocolate chips optional: substitute raisins for chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a baking sheet with butter and dust with flour.
- In a bowl, mix together all ingredients except the chocolate chips. You may need to use your hands to ensure everything is well combined.
- Once the mixture is combined, gently fold in the chocolate chips. Note: the mixture will be sticky, and thatâs okay.
- Transfer the mixture to the prepared baking sheet and spread it out evenly. This requires some patience due to the sticky texture.
- Bake for approximately 35-40 minutes, or until golden and set.
- Let cool completely before cutting into bars.
