Easy Banana Cake (Halloween Edition)

Jump to Recipe Jump to Video Print Recipe

You know those recipes that just feel like home? This banana cake is one of them. It’s super soft, fluffy like a cloud, and has just a little cinnamon to make it extra cozy. It smells amazing while it’s baking, like the whole house is getting a warm hug.

This is the kind of cake you make on a Saturday afternoon with your family. No rushing. No stressing. Just mixing, laughing, maybe sneaking a taste of the batter. It’s simple, fun, and makes the day feel extra special.

And the best part? It’s really easy. You mix the wet ingredients, then the dry, stir it all together, and that’s pretty much it. Into the oven it goes, and soon your kitchen smells like magic. Every time we make it, someone says, “This is the best cake ever.” And they’re right.

Now, let’s talk comfort and flavor. I’m all about recommending that you let this cake stay in its pan, embracing that rustic charm that sets it apart.

Before I spill the beans on this recipe, let’s have a heart-to-heart about a couple of things you should know upfront:

  • Brace yourself – this stuff is addictive. You might just find yourself in a love-hate relationship with your friends and family when you serve up this sensational treat. I kid you not, it’s that incredible.
  • Hold off on thinking about Instagram-worthy aesthetics. Nope, not even in the ballpark. This is all about comfort and flavor. I’m staying true to my recommendation – let it be in the pan, let it own that rustic allure.

Ingredients for Banana Cake :

Banana cake ingredients: flour, sugar, breadcrumbs, cinnamon, baking powder, eggs and oil
  • 3-4 bananas: (sizes vary, so opt for 3 large or 4 medium/small ones – and make sure they’re perfectly ripe, check my pics for reference).
  • Oil: (any vegetable option like safflower, grapeseed, or sunflower works wonders here).
  • Eggs:(and remember, room temperature eggs are the key to baking success).
  • white sugar, all purpose flour and breadcrumbs (yes, breadcrumbs – but go for plain ones, no one’s craving garlicky cake).
  • Baking powder (a gentle reminder: it’s not the same as baking soda).
  • cinnamon (feel free to play with this, I suggest 1-3 teaspoons for that personal touch).
  • icing sugar for a dash of decoration.

Now, let’s talk about the brilliantly simple steps:

two greased pans
  1. Preheat your oven to 350 degrees.
  2. Grease two 9-inch cake pans and sprinkle them with flour.
liquid ingredients

3. Get your blender out and combine the wet ingredients (bananas, oil, eggs, and half of the sugar).

mixing dry ingredients

4. In a large bowl, combine all the dry ingredients (flour, breadcrumbs, the remaining sugar, baking powder, and cinnamon).

combine liquid and dry ingredients to make cake batter

5. Add the blended ingredients to the dry ingredients to create your cake batter.

cake batter for banana cake divided equally between two pans

6. Divide the batter equally between the two pans, then bake for around 30-40 minutes. Allow the cakes to cool down.

Now, let’s add a touch of magic. To make your banana bread extra pretty, grab a fine mesh sieve and gracefully sprinkle icing sugar on top. Trust me, this move is a game-changer. Here’s where you can let your creativity soar – whether it’s holiday vibes or making your kiddos’ eyes light up, the possibilities are endless. We went with a jack-o’-lantern theme today, but I’ve got you covered with the link to the stencil I used – just in case you’re curious.

Here is the link to the Country Living website where they have several halloween templates available: https://www.countryliving.com/diy-crafts/how-to/a3048/halloween-templates-1009/

Here’s a sneak peek at my process:

banana cake decorated as jack o lantern using icing sugar
  1. Printed the design.
  2. Worked my scissors around the drawing.
  3. Positioned the masterpiece on the cake with precision.
  4. Embraced the mesh sieve, letting that icing sugar dance over the top.
  5. Gently bid farewell to the paper, with a toothpick coming to the rescue – no smudges allowed.

And there you have it – an effortless, stunning, and melt-in-your-mouth masterpiece. Now, here’s a word of wisdom – don’t even think about whipping out your camera today for some Instagram shots. Trust me, everyone’s in it for the devouring. So go on, savor the moment, and here’s to a sweet evening spent with the people who mean the world to us. Always remember, sometimes the simplest things bring the most joy.

  • 3 eggs
  • 1 cup white sugar

In a large mixing bowl:

  • 1 cup all purpose flour
  • 1 cup plain breadcrumbs (make sure it isn't seasoned!)
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon

To decorate the cake

  • icing sugar (sprinkle as much as you like)

Instructions

  • Preheat your oven to 350 degrees.
  • Grease two 9-inch cake pans and sprinkle them with flour.

And now, onto some FAQs:

  • How do I know when it’s done baking? Insert a toothpick – if it emerges clean, its ready. If there’s a bit of batter hanging on, give it a few more minutes. Oh, and that mouthwatering aroma? It’s a telltale sign that the cake is almost there. If your house isn’t smelling like a bakery yet, it’s not quite ready.
  • How ripe do the bananas need to be to make banana cake? A few dark spots are your indicator of perfect ripeness. Got a bunch of bananas on the verge of being tossed? They’re gold for this cake, trust me.
  • Can I add chocolate to this banana cake? I haven’t gone there yet, but if you decide to throw in some chocolate, do let me in on the outcome, won’t you?
  • How do I store banana cake? Can banana cake be left out? Wrap it in plastic wrap or store it in an airtight container. Your choice – countertop or fridge.
  • How long does banana cake last? If it’s hanging out at room temperature, count on around 4 days. You might eke out a little longer if you opt for the fridge.
  • Can you freeze banana cake? I haven’t tried freezing this recipe yet, but I believe it will work. If you decide to go the freezer route, drop a line below and let us all in on the verdict.

So there you have it, my friends – the gateway to banana bread nirvana. Get baking, get inventive, and most importantly, get ready to savor every bite. Here’s to the beauty of simplicity, and here’s to the love of a truly delicious treat. Cheers!

If you have any questions please let me know, and if you made the recipe don’t forget to share it. Thank you!
