Chocolate Truffle Ice Cream

Jump to Recipe Jump to Video Print Recipe

Despite the name, this isn’t your typical light and airy ice cream. Made with just chocolate, cream, and egg yolks, it freezes into a rich, dense dessert that’s somewhere between chocolate ice cream, frozen mousse, and a chocolate truffle.

If you’re looking for a classic scoop-shop style ice cream, this isn’t it. Every bite is intensely chocolatey, velvety smooth, and wonderfully decadent. Best of all, it comes together with only 3 simple ingredients and requires very little hands-on time.

Why You’ll Love This Recipe

  • Only 3 ingredients
  • No ice cream maker required
  • Ultra-rich chocolate flavor
  • Somewhere between ice cream, mousse, and a truffle
  • Perfect for special occasions and holidays
  • Easy to make ahead
  • A must-try for chocolate lovers

Ingredients

You’ll need just three ingredients:

  • 500 g whipping cream
  • 400 g bittersweet chocolate chips
  • 4 large egg yolks
ingredient to make 3 ingredient chocolate ice cream

Ingredient Notes

Because this recipe contains only three ingredients, the chocolate is the star of the show.

For the best flavor, use a bittersweet chocolate you enjoy eating on its own. The better the chocolate, the better the final dessert.

The egg yolks help create a silky texture, while the cream adds richness and body.

How to Make Chocolate Truffle Ice Cream

Whisk the cream and egg yolks together and cook until slightly thickened. Stir in the chocolate until smooth, whip until light and fluffy, then freeze until firm.

The result is a rich frozen dessert that’s somewhere between chocolate ice cream, mousse, and a chocolate truffle.

Pro Tip

Use the best chocolate you can find: Since chocolate is the primary flavor in this recipe, choosing a high-quality bittersweet chocolate will give you a smoother texture and a deeper, richer flavor.

Whip before freezing: After the chocolate has fully melted and the mixture has cooled slightly, beat it with a hand mixer or stand mixer for a few minutes before freezing. Incorporating extra air helps create a lighter, smoother texture and makes the finished ice cream easier to scoop.

Serving Suggestions

Because this dessert is incredibly rich, a small scoop goes a long way.

Serve it with:

  • Fresh berries
  • Whipped cream
  • Chocolate shavings
  • Toasted hazelnuts
  • Caramel sauce
  • A cup of coffee or espresso

Storage

Store in an airtight container in the freezer for up to 2 weeks.

For the easiest scooping, let it sit at room temperature for 10 to 15 minutes before serving.

Frequently Asked Questions

Is this traditional ice cream?

Not exactly. The texture is richer and denser than traditional ice cream, making it similar to frozen chocolate mousse or frozen chocolate ganache.

Do I need an ice cream maker?

No. Simply whip the mixture and freeze.

Can I make it ahead?

Absolutely. This is a great make-ahead dessert and can be prepared several days in advance.

Can I use milk chocolate?

Yes, but the finished dessert will be sweeter and softer than the original recipe.

Why is it called Chocolate Truffle Ice Cream?

Because the texture and flavor are reminiscent of a chocolate truffle—rich, smooth, and intensely chocolatey—while still being served frozen like ice cream.

The secret to a ridiculously flaky pie crust? Vodk The secret to a ridiculously flaky pie crust? Vodka. 🥧🤫

This pecan pie has a buttery, flaky crust, a gooey golden filling, and plenty of toasted pecans. And instead of corn syrup, I use golden syrup for a rich, caramel-like sweetness that makes every bite irresistible.

The vodka trick helps keep the dough tender and easy to work with, without developing too much gluten. You won’t taste it in the finished crust, but you’ll notice the difference!

Save this one for your Thanksgiving dessert table. 🍂🤎

This classic Portuguese soup, made with tender potatoes, smoky chouriço, and thinly sliced collard greens, is simple, hearty, and full of comfort.

It’s the kind of recipe that brings everyone to the table, especially on a chilly fall evening. Serve it with a slice of crusty bread, and you have the coziest meal.

Some recipes are more than just food. They’re memories, traditions, and a little taste of home. ❤️

Crispy Cornmeal-Coated Liver 🤎 If liver isn’t usu Crispy Cornmeal-Coated Liver 🤎

If liver isn’t usually your thing, this might change your mind.

I soak the liver in milk first to mellow the flavour, remove the tough silver skin, season it well, then coat the pieces in cornmeal before pan-frying until golden and crisp.

It’s an old-fashioned, budget-friendly way to cook liver that my family loves — and one of those recipes that makes me appreciate nose-to-tail cooking.

Would you try liver prepared this way?

This is the kind of dinner I want when it’s cold o This is the kind of dinner I want when it’s cold out and I’ve run out of enthusiasm for dinner.

Beef, rice, butternut squash, and a little coconut milk all cooked together until the rice is creamy, the squash is soft, and the broth is deeply savory. It’s somewhere between a soup and a risotto, except you don’t have to stand there stirring it for half an hour.

I make this in the Instant Pot, which means the beef gets wonderfully tender before the rice goes in. And yes, you should eat it right away — the rice has plans of its own and will happily absorb every last drop of broth if you let it sit.

It’s cozy, unfussy, and exactly the sort of dinner that makes a regular Tuesday feel a little better.

Brazilian Pudim 🤎 It’s funny how our taste buds c Brazilian Pudim 🤎

It’s funny how our taste buds change as we get older. This was my grandmother’s favorite dessert, and I never really understood the obsession.

And now? I’m slowly becoming obsessed with it, too.

Brazilian pudim is a silky, caramel-covered custard that looks far more impressive than the effort it requires. You make a quick caramel, pour in the custard, and let it bake gently in a water bath until it has that perfect, barely-there wobble.

The best part? It’s an excellent make-ahead dessert for a special occasion. Make it the day before, let it chill overnight, and all that’s left to do is loosen the caramel, flip it onto a plate, and admire your work.

And, ideally, try to get a slice before everyone else does. 🤎#tastyrecollections #easyrecipes #pudim #pudimdeleitecondensado #brazilianfood
🎶 Working 9 to 5… 🎶 And then coming home and real 🎶 Working 9 to 5… 🎶

And then coming home and realizing you still have to figure out what everyone is eating for dinner.

This is one of those recipes I make when I want something hearty and comforting, but absolutely do not want a complicated project.

Ground beef, potatoes, butternut squash, and a few pantry staples all go into one pot and simmer away until everything is tender.

I like using frozen butternut squash for this because wrestling with a whole squash on a Tuesday night is simply not happening.

It’s cozy, budget-friendly, and makes enough for leftovers — which means tomorrow’s dinner is already halfway figured out.

Honestly, that’s the kind of recipe I want after a 9-to-5.

I’ve been making a lot of banana things lately. T I’ve been making a lot of banana things lately.

This is partly because I like banana cake, and partly because my children have a very unpredictable relationship with bananas. Sometimes they eat them all. Sometimes they look at them as if I’ve brought home a completely unfamiliar fruit.

For this one, I make a caramel first, then add the bananas and cinnamon and let them cook for another minute. The mixture goes into the batter, and the cake gets a simple cinnamon glaze.

It’s a good cake for an afternoon coffee, or for when you have a few bananas that need a little help.

And if you have children, you may want to make two.

If you need a little help getting zucchini onto th If you need a little help getting zucchini onto the table, make these crispy zucchini fritters. 🥒

They’re cheesy, golden, crispy around the edges, and soft in the middle—and they’re one of my favorite ways to make a vegetable disappear from my kids’ plates.

The trick is getting the zucchini mixture to the right consistency. Moist, but not wet. If yours looks a little looser, just add a bit more flour. And don’t skip flattening them in the pan—it gives you even more crispy edges.

Serve them for breakfast, lunch, dinner, or as an easy vegetable side dish. They’re also a pretty good option for the zucchini skeptics in your life. 😉

Are you a zucchini person, or do I need to convince you? 👇

It’s intensely chocolatey, packed with crunchy walnuts, and topped with a silky white chocolate coffee glaze. And somehow, the banana flavor stays subtle enough that even a banana skeptic like me absolutely loved it.

It’s also a great way to use up those very ripe bananas that somehow appear on your counter every few weeks. One bowl, pantry staples, no special equipment.
