Black Eyed Pea Salad with Honey Mustard Dressing

Jump to Recipe Jump to Video Print Recipe

This Black Eyed Pea Salad with Honey Mustard Dressing is one of my go-to side dishes for barbecues and potlucks because it’s easy to throw together, travels well, and holds up nicely for a few hours without getting soggy. The honey mustard dressing gives it that sweet and tangy flavor that makes it a little different from your typical bean salad.

easy black eyed pea salad with fresh vegetables

I love how colorful and crunchy it is with the bell peppers, cucumbers, and tomatoes, plus the fresh herbs really bring everything to life. It’s light enough for spring and summer, but still filling enough that you can enjoy it on its own too. If you need something quick, reliable, and crowd-friendly, this is one of those recipes that just works every time.

If you’re putting together a spread, I also have a few similar salads that work really well for the same kind of gatherings—like my Cowboy Caviar (without avocado) or this Greek Salad with Pickled Onions. They’re just as easy and great to make ahead.

💖I help busy families create memorable meals with simple, heartfelt homemade recipes
👩‍🍳 Inspired by grandma 🇧🇷 🇨🇦

This is the kind of dinner I want when it’s cold o This is the kind of dinner I want when it’s cold out and I’ve run out of enthusiasm for dinner.

Beef, rice, butternut squash, and a little coconut milk all cooked together until the rice is creamy, the squash is soft, and the broth is deeply savory. It’s somewhere between a soup and a risotto, except you don’t have to stand there stirring it for half an hour.

I make this in the Instant Pot, which means the beef gets wonderfully tender before the rice goes in. And yes, you should eat it right away — the rice has plans of its own and will happily absorb every last drop of broth if you let it sit.

It’s cozy, unfussy, and exactly the sort of dinner that makes a regular Tuesday feel a little better.

Brazilian Pudim 🤎 It’s funny how our taste buds c Brazilian Pudim 🤎

It’s funny how our taste buds change as we get older. This was my grandmother’s favorite dessert, and I never really understood the obsession.

And now? I’m slowly becoming obsessed with it, too.

Brazilian pudim is a silky, caramel-covered custard that looks far more impressive than the effort it requires. You make a quick caramel, pour in the custard, and let it bake gently in a water bath until it has that perfect, barely-there wobble.

The best part? It’s an excellent make-ahead dessert for a special occasion. Make it the day before, let it chill overnight, and all that’s left to do is loosen the caramel, flip it onto a plate, and admire your work.

And, ideally, try to get a slice before everyone else does. 🤎#tastyrecollections #easyrecipes #pudim #pudimdeleitecondensado #brazilianfood
🎶 Working 9 to 5… 🎶 And then coming home and real 🎶 Working 9 to 5… 🎶

And then coming home and realizing you still have to figure out what everyone is eating for dinner.

This is one of those recipes I make when I want something hearty and comforting, but absolutely do not want a complicated project.

Ground beef, potatoes, butternut squash, and a few pantry staples all go into one pot and simmer away until everything is tender.

I like using frozen butternut squash for this because wrestling with a whole squash on a Tuesday night is simply not happening.

It’s cozy, budget-friendly, and makes enough for leftovers — which means tomorrow’s dinner is already halfway figured out.

Honestly, that’s the kind of recipe I want after a 9-to-5.

I’ve been making a lot of banana things lately. T I’ve been making a lot of banana things lately.

This is partly because I like banana cake, and partly because my children have a very unpredictable relationship with bananas. Sometimes they eat them all. Sometimes they look at them as if I’ve brought home a completely unfamiliar fruit.

For this one, I make a caramel first, then add the bananas and cinnamon and let them cook for another minute. The mixture goes into the batter, and the cake gets a simple cinnamon glaze.

It’s a good cake for an afternoon coffee, or for when you have a few bananas that need a little help.

And if you have children, you may want to make two.

If you need a little help getting zucchini onto th If you need a little help getting zucchini onto the table, make these crispy zucchini fritters. 🥒

They’re cheesy, golden, crispy around the edges, and soft in the middle—and they’re one of my favorite ways to make a vegetable disappear from my kids’ plates.

The trick is getting the zucchini mixture to the right consistency. Moist, but not wet. If yours looks a little looser, just add a bit more flour. And don’t skip flattening them in the pan—it gives you even more crispy edges.

Serve them for breakfast, lunch, dinner, or as an easy vegetable side dish. They’re also a pretty good option for the zucchini skeptics in your life. 😉

Are you a zucchini person, or do I need to convince you? 👇

I don’t even like bananas… and I ate this chocolat I don’t even like bananas… and I ate this chocolate banana bread for breakfast, dessert, and basically everything in between. 😂

It’s intensely chocolatey, packed with crunchy walnuts, and topped with a silky white chocolate coffee glaze. And somehow, the banana flavor stays subtle enough that even a banana skeptic like me absolutely loved it.

It’s also a great way to use up those very ripe bananas that somehow appear on your counter every few weeks. One bowl, pantry staples, no special equipment.

And yes, I ate an embarrassing amount of this one myself. 😅
