Easy Strawberry Almond Cake

Dinner isn’t the only thing you can pull together fast and make it feel special. This easy strawberry almond cake is simple, beautiful, and always gets compliments — even when I serve it to guests. It’s the kind of cake you can throw together with what you probably already have at home. The vanilla extract gives it that cozy bakery flavor, and the juicy strawberries tucked inside the soft, buttery crumb make it feel extra summery and fresh.

👩‍🍳 Method Overview

Mix the melted butter, sugar, and extracts, then beat in the eggs. Stir in the dry ingredients and milk until smooth, fold in the chopped strawberries, and pour into a greased pan. Top with sliced almonds and bake until golden and set — then dust with powdered sugar before serving.

How to Store

If you have leftovers (which doesn’t usually happen here!), you can store the cake in an airtight container at room temperature for up to 2 days. If your kitchen’s warm or humid, pop it in the fridge — just let it sit out a bit before eating so the texture softens again.


How to Serve

This cake is delicious all on its own, especially with a coffee or tea in the afternoon. But if you want to dress it up a little:

  • Add a dollop of whipped cream or vanilla yogurt
  • Serve warm with a scoop of vanilla ice cream
  • Drizzle with a spoonful of strawberry jam or a quick berry compote

It’s the kind of recipe you make once, and it just becomes “that cake” — the one you’re known for. Simple, pretty, and full of flavor.

  • Stand mixer, hand mixer or whisk
  • 8-inch baking pan

Ingredients

  • 150 g butter 5.3oz
  • 200 g sugar 7oz
  • 1 teaspoon vanilla extract
  • 1 tablespoon almond extract can subsitute for more vanilla extract
  • 2 large eggs
  • 225 g all-purpose flour 7.9oz
  • Pinch of salt
  • 100 ml milk 1/3 cup +1 tbsp
  • 1 heaping tsp baking powder
  • 280 g strawberries chopped (2 cups)
  • 70 g sliced almonds 1/2 cup
  • Powdered sugar for dusting

Instructions

  • Let your ingredients sit out for a bit so they’re not too cold — it helps everything mix better.
  • Wash, dry, and chop the strawberries. Set them aside.
    280 g strawberries
  • Preheat your oven to 170°C (about 340°F).
  • In a mixing bowl, cream the butter and sugar until light and a bit fluffy — about 2 minutes with a whisk or hand mixer. Then mix in the almond extract and vanilla.
    150 g butter, 200 g sugar, 1 teaspoon vanilla extract, 1 tablespoon almond extract
  • Add the eggs one at a time, mixing well after each.

  • Add the flour, salt, and milk. Mix just until smooth.
    225 g all-purpose flour, Pinch of salt, 100 ml milk
  • Stir in the baking powder, then gently fold in the strawberries.
    1 heaping tsp baking powder, 280 g strawberries
  • Pour the batter into a greased and floured 20 cm (8-inch) round pan with a removable bottom if you have one.
  • Sprinkle sliced almonds on top and bake for around 50 minutes. Check with a toothpick — it should come out clean or with just a few crumbs.

  • Let cool, then dust with powdered sugar right before serving.
