Easy Strawberry Almond Cake

Equipment

Ingredients

  • 150 g butter 5.3oz
  • 200 g sugar 7oz
  • 1 teaspoon vanilla extract
  • 1 tablespoon almond extract can subsitute for more vanilla extract
  • 2 large eggs
  • 225 g all-purpose flour 7.9oz
  • Pinch of salt
  • 100 ml milk 1/3 cup +1 tbsp
  • 1 heaping tsp baking powder
  • 280 g strawberries chopped (2 cups)
  • 70 g sliced almonds 1/2 cup
  • Powdered sugar for dusting

Instructions

  • Let your ingredients sit out for a bit so they’re not too cold — it helps everything mix better.
  • Wash, dry, and chop the strawberries. Set them aside.

  • Preheat your oven to 170°C (about 340°F).
  • In a mixing bowl, cream the butter and sugar until light and a bit fluffy — about 2 minutes with a whisk or hand mixer. Then mix in the almond extract and vanilla.

  • Add the eggs one at a time, mixing well after each.

  • Add the flour, salt, and milk. Mix just until smooth.

  • Stir in the baking powder, then gently fold in the strawberries.

  • Pour the batter into a greased and floured 20 cm (8-inch) round pan with a removable bottom if you have one.
  • Sprinkle sliced almonds on top and bake for around 50 minutes. Check with a toothpick — it should come out clean or with just a few crumbs.

  • Let cool, then dust with powdered sugar right before serving.
