Easy Ground Beef Fried Rice

Hey friends! Ever had one of those days where everything feels chaotic and dinner is the last thing you want to deal with? Yup, me too. This is why I am sharing this recipe. This  Easy Ground Beef Fried Rice is a one-pot, weeknight hero that practically cooks itself. It’s the dish that saves you when you’ve got zero energy, picky eaters, and a to-do list that won’t quit. Simple, hearty, and loaded with flavor, this is the kind of easy meal that makes you feel instantly satisfied with every bite. Bonus? Minimal cleanup, so you can get back to your life faster. 


Ingredients and Substitutions

Sauce:

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp mirin 
  • 1/2 tsp white sugar

Scrambled eggs:

  • 1 tbsp butter
  • 3 eggs , lightly whisked

Fried rice:

  • 2 tbsp olive oil
  • 1/2 onion , finely diced
  • 3 garlic cloves , finely minced
  • 400 g beef
  • 1.5 cups frozen diced carrots, peas, corn (still frozen or use fresh)
  • 3 cups day-old cooked white rice ( 1 cup uncooked rice = 3 cups cooked rice) ( see note)
  • 1/2 cup finely sliced green onions  (1-2 stems)

Why Use Day-Old Rice

If you don’t have leftover rice, don’t even try to make this recipe with freshly cooked rice. You will be disappointed. However, if you’re determined to make it, I’ve had luck cooking fresh rice, then spreading it on a baking sheet and placing it in the freezer for a couple of hours to let it dry out. This method can work well to achieve that crumbly texture essential for great fried rice.


How to Make Ground Beef Fried Rice

Step 1: Scrambled Eggs

Melt 2 tbsp butter in a large skillet over medium heat. Add the whisked eggs and stir constantly so to get soft and fluffy eggs. Don’t walk away—no one likes dry, overcooked eggs. Once they’re just set, take them out and set aside.

Step 2: Sauté the Onion and Garlic

Add 4 tbsp olive oil to the skillet and toss in the diced onion. Let it sizzle for about 2 minutes, then add the minced garlic and cook for another 2 minutes. Your kitchen should be smelling amazing by now.

Step 3: Cook the Ground Beef

Throw in the ground beef and break it apart with your spatula. Cook until it’s browned and any liquid has evaporated. While that’s going, mix your sauce ingredients in a small bowl and set aside. When the beef is done, pour two tablespoons of the sauce over and cook it for 2 min) 

Step 4: Add the Vegetables  Toss in the mixed vegetables and it and let the beef caramelize a bit—don’t rush this part. That deep, rich flavor comes from letting it get those golden-brown edges.

Step 5: Add the Rice and Remaining Sauce Add the day-old rice and pour the rest of the sauce over the top. Mix everything well, then here’s the game-changer: press the rice down slightly and let it sit so some bits get crispy. Stir, press down again, and repeat a few times. Those crispy bits? Absolute gold. Just don’t let it burn, so keep an eye on it.

Step 6: Finish and Serve

Gently fold the scrambled eggs back into the skillet and sprinkle with green onions. That’s it! Enjoy!

Using day-old rice is key to achieving that perfect, crumbly texture in fried rice. Freshly cooked rice tends to be too moist, leading to sticky, clumped fried rice. Not what we’re aiming for!

Pro Tip:  I like keep batches of cooked rice in your freezer. When you need it, a quick reheat (with a sprinkle of water) will make it steamy and ready to use in stir-fries. Plus, it stays crumbly enough for great fried rice. So next time you make too much rice, you know what to do!

How to Serve

Serve your ground beef fried rice straight from the skillet for maximum comfort-food vibes. Pair it with a side of miso soup, quick cucumber salad if you’re feeling fancy or some pickled veggies. 


How to Store

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, toss it in a skillet over medium heat to bring back some of that crispiness, or use the microwave if you’re in a hurry.

Instructions

  • Melt 1 tbsp butter in a large skillet over medium heat. Add the whisked eggs, stirring constantly to create soft, fluffy eggs. Once set, remove from the skillet and set aside.
  • Add 1 tbsp olive oil to the skillet, toss in the diced onion, and let it sizzle for 2 minutes. Add the minced garlic and cook for another 2 minutes.

It’s intensely chocolatey, packed with crunchy walnuts, and topped with a silky white chocolate coffee glaze. And somehow, the banana flavor stays subtle enough that even a banana skeptic like me absolutely loved it.

Made with whipping cream, egg yolks, and chocolate, it doesn’t taste like traditional ice cream at all. It’s rich, dense, silky, and somewhere between a chocolate truffle and a frozen mousse.

I added a splash of vanilla but you don’t have to.

No ice cream maker. No condensed milk. Just three simple ingredients and a little patience while it freezes
