Quick and Easy Cornmeal Crusted Salmon

Jump to Recipe Jump to Video Print Recipe

If you need a quick, no-fuss dinner that doesn’t keep you stuck in the kitchen, this one’s it. My crispy cornmeal salmon is crunchy on the outside, juicy inside, and comes together with just a handful of pantry ingredients. Best part? It’s one of those rare winner dinners—all my kids eat it, no complaints, and usually ask for seconds (basically a miracle in my house 🙌).

This has officially become my go-to salmon recipe for busy nights. Fast prep, super crunchy, kid-approved, and zero stress. I think it’ll be a staple in your kitchen too.

Why should you make this recipe?

✨ Delicious – That golden cornmeal crust is super crunchy and full of flavor.

🥄 Simple – No fancy tools, no fuss. Just 4 pantry ingredients and you’re set.

⏱ Fast – Dinner on the table in under 30 minutes (salmon + side = complete meal).

💪 Healthy – Salmon is loaded with omega-3s, protein, and healthy fats—great for adults and kids.

🙌 Family-Friendly – Even picky eaters love it (and usually ask for seconds).

Ingredients

salmon, mayo, salt and cornmeal in separate bowls

🐟 Salmon fillet

  • Fresh or frozen both work (thaw frozen under running water to save time).
  • Go for skinless fillets—much faster for prep.
  • If yours has skin, remove it before breading.

🌽 Medium-grind cornmeal

  • Coarse crumbs = that irresistible crunch.

🥄 Mayonnaise

  • Adds flavor, keeps salmon moist, and helps the crust stay crispy. You can use a light mayo if you like.

🧂 Salt

  • Simple but essential.

🔥 Salmon Skin Hack

Want to remove salmon skin in seconds?

Boil a kettle of water and carefully pour it over the salmon fillet (skin side up). The hot water loosens the skin instantly—just grab an edge and it peels right off with almost no effort. Pat the fish dry before breading to keep it extra crispy.

Let’s get cooking:

salmon fillet seasoned with salt

1.Start by patting the salmon fillets dry with a paper towel to remove any excess moisture.

2. Sprinkle a pinch of salt on both sides of the salmon fillets; this step enhances the fish’s flavor.

salmon with mayo

3. Now, lightly spread a thin layer of mayonnaise on both sides of the salmon. Mayo will help the cornmeal stick, giving you that satisfying crunch.

4. Place cornmeal in a medium-sized bowl. Press the salmon fillets into the cornmeal, making sure they’re evenly coated. This is where the magic happens, creating that irresistible crispy crust.

5.Heat a large skillet (nonstick) over medium-high heat. Add a drizzle of olive oil to your pan. Then, carefully place the salmon fillets in the skillet and cook until they turn a beautiful golden brown, usually around 3-4 minutes per side.

6. Once both sides are perfectly browned, remove the salmon from the skillet and place them on a plate lined with paper towels to blot any excess oil.

There you have it! Your mouthwatering cornmeal-crusted salmon is ready to be devoured. Serve it piping hot and savor the delightful crunch and flavor.

Pro Tip: If you have little ones who adore crunchy foods, this recipe is a sure hit. It’s also an excellent way to incorporate healthy fish into your family’s diet.

FAQs:

  1. Can I use a different type of fish? Absolutely! This recipe is versatile and can be adapted to various types. Feel free to experiment and find your family’s new favorite.
  2. Can I use eggs instead of mayo? While eggs can be used, I recommend sticking with mayo for its flavor and convenience. Mayo eliminates the hassle of dealing with leftover eggs and still delivers fantastic results. But if you prefer eggs, give it a try and let us know how it turns out!
  3. Can I use a different kind of mayo? Different Mayo brands haven’t significantly altered the results in my experience.
  4. What sides do you recommend serving with this dish? This salmon pairs wonderfully with a variety of sides. Consider serving it with a fresh green salad, steamed vegetables, or a side of  veggie rice, mashed potatoes or quinoa for a balanced meal. You can add some lemon wedges refreshing touch.
  5. Can I prepare the salmon in advance and cook it later? It’s best to coat the salmon with cornmeal and mayo just before cooking to ensure the cornmeal stays crispy. However, you can prepare the fillets and refrigerate them for a short time (up to an hour or so) before cooking if needed.
  6. How can I store leftover salmon? Leftovers can be stored in the fridge, but it’s best not to keep them for too long. Fish tends to lose its crispiness when reheated, and the texture may become drier. This dish is ideal for serving fresh, so try not to make more than you’ll consume in one sitting.

This a great recipe for a busy weeknight or a special dinner with friends. It’s sure to be a hit every time you make it.

The secret to a ridiculously flaky pie crust? Vodk The secret to a ridiculously flaky pie crust? Vodka. 🥧🤫

This pecan pie has a buttery, flaky crust, a gooey golden filling, and plenty of toasted pecans. And instead of corn syrup, I use golden syrup for a rich, caramel-like sweetness that makes every bite irresistible.

The vodka trick helps keep the dough tender and easy to work with, without developing too much gluten. You won’t taste it in the finished crust, but you’ll notice the difference!

Save this one for your Thanksgiving dessert table. 🍂🤎

Crispy Cornmeal-Coated Liver 🤎 If liver isn’t usu Crispy Cornmeal-Coated Liver 🤎

If liver isn’t usually your thing, this might change your mind.

I soak the liver in milk first to mellow the flavour, remove the tough silver skin, season it well, then coat the pieces in cornmeal before pan-frying until golden and crisp.

It’s an old-fashioned, budget-friendly way to cook liver that my family loves — and one of those recipes that makes me appreciate nose-to-tail cooking.

Would you try liver prepared this way?

This is the kind of dinner I want when it’s cold o This is the kind of dinner I want when it’s cold out and I’ve run out of enthusiasm for dinner.

Beef, rice, butternut squash, and a little coconut milk all cooked together until the rice is creamy, the squash is soft, and the broth is deeply savory. It’s somewhere between a soup and a risotto, except you don’t have to stand there stirring it for half an hour.

I make this in the Instant Pot, which means the beef gets wonderfully tender before the rice goes in. And yes, you should eat it right away — the rice has plans of its own and will happily absorb every last drop of broth if you let it sit.

It’s cozy, unfussy, and exactly the sort of dinner that makes a regular Tuesday feel a little better.

Brazilian Pudim 🤎 It’s funny how our taste buds c Brazilian Pudim 🤎

It’s funny how our taste buds change as we get older. This was my grandmother’s favorite dessert, and I never really understood the obsession.

And now? I’m slowly becoming obsessed with it, too.

Brazilian pudim is a silky, caramel-covered custard that looks far more impressive than the effort it requires. You make a quick caramel, pour in the custard, and let it bake gently in a water bath until it has that perfect, barely-there wobble.

The best part? It’s an excellent make-ahead dessert for a special occasion. Make it the day before, let it chill overnight, and all that’s left to do is loosen the caramel, flip it onto a plate, and admire your work.

And, ideally, try to get a slice before everyone else does. 🤎#tastyrecollections #easyrecipes #pudim #pudimdeleitecondensado #brazilianfood
🎶 Working 9 to 5… 🎶 And then coming home and real 🎶 Working 9 to 5… 🎶

And then coming home and realizing you still have to figure out what everyone is eating for dinner.

This is one of those recipes I make when I want something hearty and comforting, but absolutely do not want a complicated project.

Ground beef, potatoes, butternut squash, and a few pantry staples all go into one pot and simmer away until everything is tender.

I like using frozen butternut squash for this because wrestling with a whole squash on a Tuesday night is simply not happening.

It’s cozy, budget-friendly, and makes enough for leftovers — which means tomorrow’s dinner is already halfway figured out.

Honestly, that’s the kind of recipe I want after a 9-to-5.

I’ve been making a lot of banana things lately. T I’ve been making a lot of banana things lately.

This is partly because I like banana cake, and partly because my children have a very unpredictable relationship with bananas. Sometimes they eat them all. Sometimes they look at them as if I’ve brought home a completely unfamiliar fruit.

For this one, I make a caramel first, then add the bananas and cinnamon and let them cook for another minute. The mixture goes into the batter, and the cake gets a simple cinnamon glaze.

It’s a good cake for an afternoon coffee, or for when you have a few bananas that need a little help.

And if you have children, you may want to make two.

If you need a little help getting zucchini onto th If you need a little help getting zucchini onto the table, make these crispy zucchini fritters. 🥒

They’re cheesy, golden, crispy around the edges, and soft in the middle—and they’re one of my favorite ways to make a vegetable disappear from my kids’ plates.

The trick is getting the zucchini mixture to the right consistency. Moist, but not wet. If yours looks a little looser, just add a bit more flour. And don’t skip flattening them in the pan—it gives you even more crispy edges.

Serve them for breakfast, lunch, dinner, or as an easy vegetable side dish. They’re also a pretty good option for the zucchini skeptics in your life. 😉

Are you a zucchini person, or do I need to convince you? 👇

It’s intensely chocolatey, packed with crunchy walnuts, and topped with a silky white chocolate coffee glaze. And somehow, the banana flavor stays subtle enough that even a banana skeptic like me absolutely loved it.

It’s also a great way to use up those very ripe bananas that somehow appear on your counter every few weeks. One bowl, pantry staples, no special equipment.
