Hi folks! I wanted to bring you another favorite recipe. So you can also make Perfect Greek Chicken Souvlaki in your Air Fryer. If you do not have an air fryer, don’t worry. You can still use this recipe and make this outside on your BBQ or grill, or even in a skillet inside your house. Regardless, it always turns out great!

Ingredients and Substitutions

For this recipe, you’ll need a few basic ingredients that come together to create a delicious and flavorful dish. Here’s what you’ll need:

  • Fresh Lime Juice: Lime juice adds a bright and zesty flavor to the marinade. If you don’t have limes, you can use lemons instead.
  • Red Wine or Cider Vinegar: Both of these vinegars add acidity and depth of flavor. If you’re in a pinch, you can use white wine vinegar as a substitute.
  • Olive Oil: Olive oil is a staple in Greek cooking, providing a rich and smooth base for the marinade. You can use any mild-flavored oil if needed.
  • Dry Oregano Leaves: If you have fresh Oregano than for sure use that instead, Just double the amount listed in the recipe
  • Salt: As always adjust to taste. If you aren’t sure, add less salt than what I suggest. You can always add more later.
  • Chicken Breast: This recipe uses boneless, skinless chicken breast for lean protein. You can also use chicken thighs if you prefer a juicier texture.
  • Garlic: Fresh garlic adds a pungent and aromatic touch to the marinade. If you don’t have fresh garlic, garlic powder can be used in a pinch.

Ingredients

  • 4 tablespoons fresh juice from about 2- 3 limes or you can use lemons
  • 1 tablespoons red wine/cider vinegar
  • 4 tablespoons olive oil
  • 1 tablespoons dry oregano leaves
  • 1 tbsp teaspoons salt
  • 2 pounds skinless boneless chicken breast trimmed of excess fat and cut into 1-inch pieces
  • 5 medium cloves garlic grated (about 4 teaspoons)

Instructions

  • Prepare the Marinade: In a large bowl, combine the lime juice, red wine or cider vinegar, olive oil, oregano, salt, and grated garlic. Mix ingredients together until well combined.
  • Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well coated. You can cook the chicken immediately or let it marinate in the refrigerator for 30 minutes to 1 hour. The longer you marinate, the zestier the chicken will become. You can marinate the chicken up to 24 hours in advance.
  • Preheat the Air Fryer: If your air fryer requires preheating, set it to 390°F and allow it to preheat for a few minutes.
  • Thread the Chicken: Thread the marinated chicken pieces onto skewers. If you are using wooden skewers, be sure to soak them in water for at least 30 minutes before threading the chicken to prevent them from burning.
  • Cook the Chicken: Place the skewers in the air fryer basket in a single layer. Cook at 390°F for 15 or so, turning the skewers halfway through the cooking time. The chicken should be golden brown and cooked through, with an internal temperature of 165°F (75°C).
  • Serve: Pair the chicken souvlaki with your favorite sides such as rice, salad, grilled vegetables, or mashed potatoes.

Make-Ahead and Storage Instructions

Refrigerating

  • Marinating Ahead: You can marinate the chicken up to a day in advance. Place the chicken and marinade in a sealed container or a zip-top bag and refrigerate. This allows the flavors to penetrate the meat more deeply, resulting in even more delicious souvlaki.
  • Storing Cooked Chicken: If you have leftover cooked chicken souvlaki, let it cool to room temperature before transferring it to an airtight container. It can be stored in the refrigerator for up to 3 days. Reheat in the air fryer or microwave until warmed through before serving.

How to Freeze Chicken Souvlaki

  • Freezing Marinated Chicken: To prepare the chicken in advance and freeze it, place the marinated chicken pieces in a freezer-safe bag or container. Ensure the chicken is well-coated with the marinade. Remove as much air as possible before sealing the bag. Label the bag with the date and contents, then freeze for up to 2 months. Thaw in the refrigerator overnight before cooking.

Reheating Tips

  • For the best texture, reheat the chicken in the air fryer at 350°F (175°C) for about 5-7 minutes, or until heated through. This helps maintain the slightly crispy exterior and juicy interior. You can also use a microwave.

Troubleshooting

  • Chicken Drying Out: Ensure you do not overcook the chicken. Air fryers can vary, so check the chicken a couple of minutes before the suggested cooking time. You can also add 1-2 tablespoons of mayo to your marinade. Seems weird, but it does help to keep your chicken from drying out.
  • Marinade Too Salty: Adjust the amount of salt to your taste preferences.

  • Can I use chicken thighs instead of breasts? Yes, chicken thighs can be used and will result in a juicier texture. Adjust cooking time as needed.
  • What if I don’t have an air fryer? You can cook the skewers on a grill, BBQ, or in a skillet on the stove. Adjust cooking times accordingly.
  • Can I make this ahead of time? Yes, you can marinate the chicken up to a day in advance. You can also freeze it for up to three months.
