Hey there! If you’ve been following me for a while, you know I hate wasting food. I’m always looking for ways to use up what I have on hand so nothing goes to waste. These Six Egg Yolk Cookie Bars are the perfect solution for when I have leftover egg yolks. This often happens when I’m making desserts that require a lot of egg whites. Additionally, I have someone in my house who’s obsessed with eating more protein (ahem, that might or might not be my dear husband). This means he often eats only the egg whites and leaves the yolks behind. Well, now I can blame him every time I make these amazing cookie bars with those leftovers! (Haha!)

The only downside is that these bars turn out absolutely amazing—I’d even say they are addictively delicious! I don’t know about you, but I’d much rather eat cookies than more protein. As you can guess, I’m no bodybuilder! 😉

6 yolk Cookie Bars Ingredients

  • Butter: Provides fat for a classic cookie texture and flavor.
  • Brown Sugar: Adds moisture and flavour.
  • White Sugar: Contributes sweetness and helps with the structure.
  • Egg Yolks: Give the bars a rich flavor and a chewy, soft texture.
  • Vanilla Extract: Enhances the overall flavor, giving a warm and aromatic touch to the bars.
  • Baking Soda and Baking Powder: Provide leavening, helping the bars to rise and achieve a light texture.
  • Salt: Balances the sweetness and enhances the other flavors in the recipe.
  • All-Purpose Flour: Forms the base of the cookie dough, providing structure. Can be partially substituted with white whole wheat or spelt flour for a healthier option.
  • Chocolate Chips: Offer a delicious burst of chocolate in every bite. They are partially mixed into the dough and sprinkled on top for extra chocolaty goodness.
  • Flakey Sea Salt (optional): Sprinkled on top for a hint of salty contrast that enhances the sweetness of the bars.

Directions and Tips for Six Egg Yolk Chocolate Chip Cookie Bars:

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper for easy removal and cleanup.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, and salt. This ensures even distribution of the baking soda, which helps the bars rise uniformly.
  3. Cream Butter and Sugars: In a separate bowl, cream together the butter and both sugars until light and fluffy. This step is crucial for the texture of your cookie bars. Tip: Make sure your butter is at room temperature for easier mixing.
  4. Add Egg Yolks and Vanilla: Beat in the egg yolks one at a time, then add vanilla extract. This gives the bars their rich, dense texture. Extra advice: If you want an extra burst of flavor, consider using a high-quality vanilla extract.
  5. Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in Chocolate Chips: Gently fold in the chocolate chips. For an even distribution, add half, mix slightly, then add the rest. You can also mix different types of chocolate chips or chunks for variety.
  7. Spread and Bake: Spread the batter evenly in the prepared baking dish. Smooth the top with a spatula to ensure even baking. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Cool and Cut: Let the bars cool completely in the pan on a wire rack. For cleaner cuts, use a sharp knife and wipe it clean between cuts.

Ingredients

  • 1 cup 226g unsalted butter, softened
  • 1 cup 208g light brown sugar, packed
  • 1/2 cup 112g white granulated sugar
  • 6 egg yolks
  • 2 tsp vanilla extract
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp salt
  • 2 1/2 cups 325g all-purpose flour
  • 1 1/2 cups chocolate chips, divided
  • Flakey sea salt to sprinkle optional

Instructions

  • Preheat your oven to 350°F (175°C) and prepare a 9×13” baking pan with parchment paper
  • In a large bowl, cream together the butter, brown sugar, and white granulated sugar until light and fluffy.
  • Incorporate the egg yolks and vanilla extract into the mixture, ensuring they’re thoroughly blended.
  • Fold in the baking soda, baking powder, and salt until well distributed.
  • Gradually add the all-purpose flour to the mixture, stirring until there are no more streaks of flour in your batter
  • Gently fold in 1 1/4 cups of the chocolate chips, distributing them evenly throughout the dough.
  • Transfer the dough to the prepared baking pan, spreading it out to create an even layer.
  • Sprinkle the remaining 1/4 cup of chocolate chips over the top of the dough.
  • Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center is set.
  • Allow the bars to cool completely in the pan on a wire rack before slicing into squares or rectangles.
  • For an extra burst of flavor, consider adding a sprinkle of flakey sea salt before serving.

While looking for a recipe that would use up lots of yolks I found this one here. I have since adapted it to our needs and preferences here at home.

Troubleshooting:

  • Bars Too Dry: Make sure not to overbake . Check them at the 25-minute mark.
  • Bars Too Wet: If the center still looks undercooked, give them a few more minutes in the oven. Every oven is different, so baking times can vary.
  • Crumbly Texture: This could be due to using too much flour. Make sure to measure your flour correctly – spoon it into the measuring cup and level it off or use a kitchen scale
  • Cookies turned out too hard: Cookies can become hard if they are baked for too long. Check your cookies a few minutes before the recommended baking time. They should be golden around the edges but still soft in the center.

After school, my friends and I would flip our back After school, my friends and I would flip our backpacks upside down looking for coins. Whatever we could find. These were 10 cents each, and we’d usually share them. It felt like the biggest treat.

Now I make them at home with just condensed milk, butter, and egg yolk. That’s it. So simple. So nostalgic.

They make the sweetest little gifts and are perfect for birthday parties.

Traditionally, they’re topped with a whole clove — but you always remove it before eating. It’s just for decoration.

My grandma, who made these for every one of my birthdays, would use tiny pieces of colorful gummies instead. That way kids could pop the whole thing in their mouth without worrying about biting into a clove.

Soft, sweet, and still worth flipping a backpack for. 🤍
